What "running hot or cold" actually means

Ovens don't hold one steady temperature. They swing. The control turns the heat on, lets it overshoot, then coasts down and fires again. A healthy oven swings maybe 20 or 25 degrees around your setting, and the average lands close. Drift means the average has moved. Set 350, average 315, and every recipe lies to you. Or the swing gets huge, 60 degrees either way, and the top of your cake sets before the middle rises. Both feel like "my oven is broken," but they point at different parts. Baking results tell us more than the display does, so pay attention to what the food does. Call us and describe the food, not just the number.

Start with the cheap stuff: habits and hardware

Rack position matters more than people expect. Move a pan one notch up and you gain real browning. A dark metal pan bakes hotter than glass at the same setting. Convection fans change effective temperature too, and some settings drop it automatically. Then there's preheat. Many ovens beep at the setpoint before the walls and racks are actually saturated with heat, so early loading means a cold start. Give it another ten minutes. Also check that the door closes flush. A warped gasket or a bent hinge lets hot air stream out the top, and the oven chases heat it keeps losing. These fixes cost nothing but attention.

The sensor and the control board

Inside the cavity is a thin metal probe, usually top rear. That's the temperature sensor. Its resistance changes with heat, and the control board reads it. When the sensor drifts, the board gets bad information and heats to the wrong point, confidently. This is a very common cause of a consistent 25 to 50 degree offset. Less often, the board itself misreads or a relay sticks so the element runs long. In Las Vegas homes we also see sensors coated in baked-on grease and hard-water spatter, which slows their reaction and widens the swing. A technician measures sensor resistance cold and hot and compares it to spec before replacing anything.

Heating elements, igniters, and airflow

Electric ovens have a bake element below and a broil element above. If the bake element has a weak spot or a broken section, the oven still heats, just slower and unevenly, and it never quite reaches setpoint. Gas ovens use an igniter that must draw enough current to open the valve. A tired igniter takes longer to light, so the burner cycles late and the cavity runs cool. Blocked vents matter too. Stacking foil across a rack or lining the floor of the oven traps heat where you don't want it and starves the rest. Never line the bottom. Use foil on a rack instead.

Safe checks for you, and what we do differently

You can do this much safely: put an oven thermometer on the center rack, set 350, wait twenty-five minutes past the beep, and read it. Check again at ten-minute intervals to see the swing. Inspect the door gasket for gaps or hard spots. Confirm you're not on a convection or delayed mode. Look up your model's calibration offset in the manual, since many controls let you shift the reading a few degrees. What we do: verify with calibrated instruments, test sensor resistance at temperature, check element continuity and igniter draw, and read the board's stored fault history. Can I just adjust the oven to compensate?

For a small, steady offset, the built-in calibration setting works fine. But if the swing is wide or the drift keeps growing, you're masking a failing sensor or element. Compensating only hides the trend.

Why does the display show 350 when my thermometer says 320?

The display shows what the control believes, based on the sensor. A drifted sensor reports high, so the board stops heating early. Your thermometer is reading reality. Trust it.

Does the self-clean cycle hurt anything?

It runs very hot, and that stress can shorten the life of sensors, door latches, and control boards. It's not forbidden. Just use it sparingly and expect occasional fallout afterward.
